One of the recurring questions I get when friends taste this juice is: what kind of juicer do I use? And my answer, which is consistently met with surprise is: I use a blender, not a juicer. Years back, I owned a juicer, but as it turns out, it was a pain to clean and I felt badly losing so much of the nutritious parts of the fruits and veggies I was using. For this recipe, all you need is a blender. While the first pour tends to be the thickest and perhaps a little foamy at the top, the last pour is super liquidy. My husband happens to love that first pour, which is a little thicker. Depending on my family members’ preferences, they either get the first, last or middle pour.
Fun to make with kids.
One of my joys in life is cooking with my daughters. Over the years, I’ve noticed how proud they are of their culinary creations, and how much more likely they are to enjoy food they participate in pulling together. When we make this green juice together, we take what we refer to as our ‘green juice stations’. While one independently cuts the celery, the other tackles the cucumber, while I take on the apple slicing and ginger peeling. They can easily toss in the greens and they love the fun of squeezing in the lemon. Of course, they take turns pressing the blender button (because what’s more fun than buttons), and finish off my foraging through our straws for the cutest one.

Ingredients
3 small (or 2 large) green apples, cored and roughly-chopped
1 small cucumber, chopped (1-½ cups)
2 celery ribs, chopped
1 small handful parsley (½ cup)
1 piece of ginger (1-inch), peeled
1 handful baby spinach (1 cup packed)
1 handful baby kale
juice of 1 small or ¾ large lemon (¼ cup)
2 cups water
20 ice cubes
Instructions
Toss all ingredients in a blender. Start blending at low speed and work your way up to the highest speed. Leafy greens have a tendency to make your juice foamy, so to reduce foam, run your blender on low speed for 10-20 seconds after you’re done blending.
