Happy Mother’s Day to all the mommas out there. While the rest of the house looks like a jungle of toys, pillows and blankies scattered on the floor, we were able to create a pretty little outdoor space to enjoy Mother’s Day lunch today.
On the menu
What I love about this Mother’s Day lunch menu is that it’s super flavorful, healthy and kid-friendly. On the menu at our place this year:
– 20-minute miso-glazed salmon
– quinoa/kale/avocado/pomegranate seed salad
– blanched asparagus
– savory beet and chart tart (made by my mom)
– strawberry galette with an almond flour crust
Everyone in my family is into the 20-minute miso-glazed salmon. It’s sweet like teriyaki sauce, but not as sticky. As for the salad, my kids acan’t get enough of the avocado, quinoa and pomegranate seeds (which I buy at Trader Joe’s), and just skip the kale. I never cared for asparagus growing up, but I’ve discovered that I really like it ever so lightly peeled, ends chopped off and blanched. The blanched asparagus turn out bright green and look so appetizing and fresh. My youngest daughter loves asparagus cooked this way so much, she will devour it all if we don’t grab our share fast enough. The almond crusted strawberry galette is my go-to dessert when the weather is warm. It’s a wonderful light and fruity dessert.
Picnic bench pick-me-up: FOUTAS
As for setting up the space, I’ve been wanting some nice covers for the picnic table benches. To add some color, texture (and also to protect my picnic benches from toddler messy eating!). At first, I was thinking cushions, but I ended up using these beautiful FOUTAS that my friend sells. I’m obsessed with them.
