This 20-minute miso-glazed salmon is a hit with the whole family. My kids, husband, parents, and friends love it. Thus far, it’s been a crowd pleaser. A little sweet and sticky, the sauce is tastes similar to teriyaki sauce. And it’s so easy to make and quick to prepare. Give it a try and let me know if you like it!
Salmon: A staple in our household
At home, I make salmon just about every other day or every three days. Sometimes for lunch, sometimes for dinner. To tell you the truth, I actually used to serve it to my kids for breakfast because they loved it that much. I know that may seem odd, but I prefer savory food in the morning, so why not? Anyhow, salmon is a low-calorie protein source that is rich in omega-3s. It’s quick and easy to bake or broil and we love how it tastes…especially when indulging in this oh-so-healthy and delicious miso-glazed salmon recipe.
Discovering Miso
Up until recently, I had only ever tasted miso in miso soups when eating our at Japanese restaurants. A friend and wonderful cook Teresa (@whatsfordinnerkids) met up with me one day at the local Asian grocery store and encouraged me to experiment with miso paste. There were so many different kinds to choose from. She suggested a lighter one: Mild Miso Soybean Paste (30% less sodium). Miso is a thick paste that tastes savory, funky and salty-sweet…or in other words, unami. Because it’s fermented, miso is a good source of probiotics, however high in salt (so I prefer to use in moderation). It’s generally a cultured mixture of soybeans, rice or barley, salt, and koji (a mold). I was curious and excited to try, but it ended up sitting in the back of my fridge for about 2 months. Because miso is so high in salt content, it actually keeps very well in the fridge for at least a year. So one day, I got the courage to try it out. Ever since then, I use it weekly.
Miso-Glaze
This miso-glaze comes together in less than 5 minutes. You simply whisk together some brown sugar, soy sauce, hot water and the miso and you’re good to go. At first, the glaze is liquidy, but as it heats up in the oven, it thickens to perfection.

Description
Quick, easy, delicious 20-minute miso-glazed salmon. Salmon fillets marinated in a mixture of miso, brown sugar, soy sauce and hot water. 5 minutes of prep and less than 20 minutes in the oven.
Ingredients
- ¼ cup brown sugar
- 2 tablespoons soy sauce, low sodium
- 2 tablespoons hot water
- 2 tablespoons light miso paste
- 1–2 pounds salmon fillets
Instructions
- In a small bowl, whisk together the brown sugar, soy sauce, hot water and miso to assemble the miso-glaze.
- Preheat oven to high broil for a crispy caramelized top or to 350 degrees F for a more even bake.
- Place 1-2 pounds of salmon filet on a baking dish. Pour glaze over it.
- Place salmon in the oven. If broiling, 8-10 minutes. If baking, cook 15-20 minutes until opaque in the center. Either way, baste the salmon one or two times while cooking so the salmon absorbs the glaze and remains juicy.
- Garnish with scallions (optional). I like to serve this with blanches asparagus, steamed broccoli or sautéed spinach with minced garlic.
We’re having it with brown rice and sautéed spinach (in olive oil, garlic and salt).
