Description
Quick, easy, delicious 20-minute miso-glazed salmon. Salmon fillets marinated in a mixture of miso, brown sugar, soy sauce and hot water. 5 minutes of prep and less than 20 minutes in the oven.

- ¼ cup brown sugar
- 2 tablespoons soy sauce, low sodium
- 2 tablespoons hot water
- 2 tablespoons light miso paste
- 1–2 pounds salmon fillets
Instructions
- In a small bowl, whisk together the brown sugar, soy sauce, hot water and miso to assemble the miso-glaze.
- Preheat oven to high broil for a crispy caramelized top or to 350 degrees F for a more even bake.
- Place 1-2 pounds of salmon filet on a baking dish. Pour glaze over it.
- Place salmon in the oven. If broiling, 8-10 minutes. If baking, cook 15-20 minutes until opaque in the center. Either way, baste the salmon one or two times while cooking so the salmon absorbs the glaze and remains juicy.
- Garnish with scallions (optional). I like to serve this with blanches asparagus, steamed broccoli or sautéed spinach with minced garlic.
We’re having it with brown rice and sautéed spinach (in olive oil, garlic and salt).
